1980's Intoxilyzer Programming: 27C256,27C512,MORE?

To summarize, these Intoxilyzer 5000 breathalyzer machines were manufactured in the mid to late 80's. The WV police academy pulled two of the eprom software chips from each one to protect their data and operations procedures, and also out of fear of legal ramifications.

I've tried other chips from a couple of working models from other states to no avail, although I've seen some evidence of cross-compatibility. I'd like to find and/or program new chips to get these things working. The alternative is scrap metal.

I have a Willem eprom duper/reader, but my programming knowledge is limited at best. I can view what looks like hieroglyphics mixed with very little English. Little help?
