Right now I'm using Debian Linux on an IBM workstation because it was the most convenient thing with an actual serial port that I had nearby. I thought about trying other hardware/OSs as well. And yeah, I figured configuring the serial console with stty would be enough. It definitely does work...

Well that is my main issue. The 101 works fine even at 19200 with flow control enabled on the host side, but some applications don't seem to use it at all and hence aren't usable. I'd be content with sticking to 9600bps if it worked 100%, and if that means finding a VT102 or VT131 then so be it...
