Is there a quick peek or something similar you can use to find how much ram is installed without opening the cover and counting chips ?

Hmmm...
Code:
PRINT FRE(0)+65536
But it won't tell you how much is in extended memory (i.e. language card, IIe 128k extended memory, etc).

Does that tell how much RAM is on the mb, or just how much is available to BASIC?
How much is available to BASIC. Which is just about as much as is on the MB (besides the bank-switched stuff, as previously mentioned).

Unlike, say, the C64, there isn't RAM "behind" the ROM chips.
