Just wondering what would happen if I stuck a VGA card in my IBM PS/2 system. Since it IS my first vintage computer, I don't want to blow it up by accident because I did something wrong.

The Model 25 will turn off the planar MCGA if a VGA card is installed. But you will need an external monitor (or to adapt to the built-in CRT from the VGA adapter). Only in the case of doing sync rates that the internal monitor couldn´t handle would you see smoke (¨blow something up¨).
